Clara de coco com gema de manga.
Ingredientes
Para a clara de coco
500 ml de leite de coco (de preferência Tailandês)
50 g de açúcar
5 g de agar agar
Para a gema de manga
400 g de polpa de manga
50 g de açúcar
100 g de água
5 g de lactato de cálcio
5 g de gluconato de cálcio
2,5 g de goma xantana
5 g de alginato de sódio
Modo de fazer
Clara de coco
Adicione o leite de coco e o açúcar em uma panela, misture os dois e ferva-os.
Após levantar a fervura, adicione o agar agar aos poucos, sempre mexendo.
Coloque a mistura ainda quente no sifão, dê uma carda de óxido nitroso.
Coloque a espuma em um prato, fazendo um círculo do tamanho de uma clara de ovo.
Gema de manga
Misture a polpa de manga com a água e açúcar, bata no liquidificador.
Adicione o lactato de cálcio, o gluconato de cálcio e a goma xantana, no vórtex (o redemoinho que se forma no centro da polpa no liquidificador). Deixe descansar por cerca de 4 horas.
Coloque em forma de silicone em forma de esfera e congele.
Bata o alginato de sódio em um litro de água utilizando o liquidificador, espere cerca de 10 minutos.
Coloque as esferas congeladas de manga na solução de alginato de sódio e espere cerca de 10 minutos para formar a película da esfera.
Empratamento
Corte um círculo do tamanho da gema na clara de coco e coloque a gema de manga na cavidade.
